Curry leaves Baath !
Ingredients
  • Curry leaves -2 fist
  • oil +ghee- 2tsp
  • chana dhal-1 tsp
  • urid dhal-1 tsp
  • cumin seeds -1/2 tsp
  • green chillies -2
  • ginger garlic paste -1 tsp
  • mustard -1/2 tsp
  • onion -1
  • tamarind paste -1/2 tsp
  • grated coconut -1 tbsp
  • cashewnut -a little
  • Cooked rice -1 bowl
Method
Prepare rice n keep aside ..
Grind curry leaves to a paste ..
in a kadai add oil + ghee ,cumin seeds, mustard, urid dhal, chana dhal n fry 4 a while then add  chopped onions fry till pink ..add in green chillies , ginger garlic paste, curry leaves paste n fry till d raw smell goes .. add tamarind paste n grated coconut .. stir .. add salt n then cooked rice .. n lastly garnish with roasted cashewnuts !

Mushroom Masala

Mushroom Masala
Ingredients
  • Mushrooms-200 gms
  • oil-2 tbsp
  • Green Cardamom-2
  • Cinnamon -1/2 inch stick
  • onions-1 large sliced
  • Ginger Garlic paste -1 tbsp
  • tomato puree -1/4 th cup
  • Red chilly powder -1 tbsp
  • Coriander powder -1 tbsp
  • Turmeric powder -1/2 tsp
  • Garam masala powder-1 tsp
  • cashew nut paste -1/4 th cup
  • salt to taste ..
Method
Heat oil in a kadai , add green cardamom, cinnamon, n chopped onion ..n saute till golden brown.. add ginger garlic paste n cook for a min . add tomato puree , red chilly powder, coriander powder, turmeric powder, garam masala powder n salt ..cook till d oil leaves masala , add cashewnut paste dissolved in 1/2 cup water , bring it to boil n then add chopped mushroom n cook til done !

Goli bhajje / Mangalore bhajje ..
Ingredients
  • Maida -1 glass
  • Besan - 3 tsp  
  • green chillies -2
  • cumin seeds-1/2  tsp
  • curds-1/4 th glass
  • sodabicab -1 pinch
  • sugar -1/2  tsp
  • salt to taste .. 
  • Oil - for frying .. 
Method
Sieve maida n besan .. ..
in a bowl add curds, sodabicab, salt , sugar, cumin seeds, finely chopped green chillies ..add in d sieved maida n besan .. mix n form a batter of normal consistency .. ( neither thick or thin )
heat oil in a kadai n deep fry !

Baby potatoes in chilly garlic !
Ingredients
  • Baby potatoes -10 -12
  • Dry kashmiri chilles - 5 to 6 
  • Garlic flakes- 8-10
  • tamarind -small marble size
  • oil -4 -6 tsp
  • salt to taste
Method
Pressure cook d baby potatoes (1 whistle )..cool , remove skin n prick with a fork !
Dry roast chillies n grind it with garlic flakes n tamarind to a fine paste ..
heat oil in a kadai add d ground paste n fry till d raw smell goes.. add in salt n d cooked potatoes ..  roast till d masala dries n well coated on the potatoes !

Ingredients
  • Dosa rice- 1 cup
  • urid dhal-1/4 th cup
  • Fenugreek seeds -1 tsp
  • dry red chilly -2
  • Asafoetida/Hing- a pinch
  • turmeric powder-1/4 th tsp
  • salt to taste
Method
soak rice, urid n fenugreek seeds for 4 hrs and grind along with dry red chilly , Asafoetida, and turmeric powder to a paste .. ferment the batter overnight ..add salt ! 

Heat d tawa , smear oil n pour a ladle full batter n spread evenly , pour a tsp of oil ..cover with d lid n cook till crisp on both sides !

Surnali ! version 1

Surnali !VERSION 1
ingredients
  • Dosa rice -1 cup 
  • Urid dhal-1/4 th cup 
  • Grated coconut-1 cup
  • Laayi (puffed rice)or beaten rice ( phova ) - 1cup
  • fenugreek seeds-1tsp
  • Curds-1cup
  •  Jaggery -Marble size  (can vary according to d sweetness )
  • Turmeric powder-1/4 th tsp
  • salt to taste
Method
Soak rice, urid dhal , fenugreek seeds for 3 hrs n grind to a fine paste with laayi or phova ( previously soaked in water for 5 mts ).. grated coconut,Curds , jaggery and turmeric powder .. remove d batter,add salt  n ferment overnt  ! 

Heat a dosa pan , smear oil ,pour a laddle full of batter ..dont spread too much..simmer d flame or else d base may blaken .. 

cover with a lid ..n cook on one side only !

Tastes gr8 with ghee or butter !

Creamy Phool Makhana ! (Lotus seeds) ...
Ingredients
  • 2 cups -Phool Makhana ( Lotus Seeds)
  • 1 cup-Fresh or frozen green peas
  • 1-medium onion
  • 1-cup tomato puree
  • 1 tsp-ginger garlic paste
  • 2 tsp -kasuri methi
  • 1 tsp-coriander powder
  • 1 tsp-chilly powder
  • 1/2 tsp-cumin powder
  • 1/4 th- tsp turmeric powder
  • 1/2 tsp -garam masala powder
  • 1/4 th cup -cashewnut paste
  • 1/2 glass water or as needed
  • coriander leaves to garnish
  • oil-3 tsp
  • salt to taste

Method
In a kadai add a tsp of oil n stir fry d phool makhana for 1 mt ,take it out .. in d same kadai add 2 tsp of oil and fry finely chopped onions till transparent , add Ginger garlic paste fry 4 a minute then add d tomato puree n cook till d raw smell goes .. add all d masalas n then d cashewnut paste , water and crushed kasuri methi add peas cook till boiled .. add salt n then d roasted phool makhana n mix well ! garnish with coriander leaves !



Biscuit Ambados



Biscuit Ambado !
Ingredients 
1 cup -Urid dhal
green chillies-2
Thinly sliced coconut -2 tsp
Chopped ginger - 1 tsp 
curry leaves -2 sprigs
salt to taste
oil for deep frying

Method
Soak urid dhal for 2 hrs n grind to a fine paste ( don't add water , just sprinkle ).. d batter has to be thick .. 

Remove the batter n add Finely chopped green chilles, thinly sliced coconut,  chopped curry leaves, finely chopped ginger and salt .. mix well ...

Heat oil in a kadai , with wet fingers , drop lemon size batter into oil n fry till golden yellow .. serve with coconut chutney..

A popular Hyderabadi dish -Mirchi ka Salan

  • Banana chillies -4
  • white sesame seeds -2 tbsp
  • groundnuts-2 tbsp
  • cumin seeds-1 tsp
  • coriander seeds-1tsp
  • turmeric powder-1/4 tsp
  • garlic -4 flakes
  • ginger -1 inch
  • dry red chillies -3
  • Thick tamarind pulp-1 tsp
  • mustard -1/4 tsp
  • curry leaves -2 sticks
  • onion -1 medium
  • salt to taste
  • water-1/2 cup 

    Method
Slit the banana chillies in between and deep fry them .. remove on a tissue paper ..

Dry roast separately white sesame seeds, groundnuts, cumin seeds, coriander seeds  .. cool it n then grind along with garlic, ginger ,dry red chillies n turmeric powder to a smooth paste ..

in a kadai add oil , mustard , curry leaves , grated onion n saute till d onions turn pink ,add  the ground paste ,salt n fry for sometime, add in water  n then d fried chillies !

Corn Biryani


Corn Biryani

  • 1cup-basmati rice
  • 11/2 glass water
  • 1cup-sweet corn
  • 1-large onion
  • 1-large tomato
  • 1tsp-ginger garlic paste
  • 1-small piece cinnamon
  • 2-cloves
  • 2.-green Cardamom
  • 1-bay leaf
  • 1/2 tsp -chilly powder
  • 1/4 th tsp-turmeric powder
  • 1/4 th tsp -turmeric powder
  • 1/4 th tsp garam masala powder
  • 1 tblsp-ghee
  • 1/4 th bunch-mint leaves
  • 2-green chillies
  • 4 -cloves garlic flakes
  • salt to taste 

Method 

Prepare rice n keep aside
pressure cook corn kernels
grind tomato and garlic flakes ..
In a kadai add ghee, bay leaf , cloves, cinnamon, cardamom, slit green chillies, chopped onions, ginger garlic paste n fry 4 a while .. then add d ground paste ..fry till d raw smell goes !..add in chopped mint leaves, add cooked corn kernels, salt, chilly powder, turmeric powder n garam masala .. add in rice n mix till all d masla is well coated !

Spring Rolls

Spring Rolls ! 
For the pastry wrap  
1 cup- Maida
3 tsp-fine rawa
4 tsp -hot oil
1/4 th cup or as needed- water
salt to taste

Filling
1/2 cup -cabbage
1/2 cup-capsicum
1/2 cup -carrots
1/2 cup -peas
1/2 cup-corn kernel's
1/2 tsp -pepper powder
1-onion
2- garlic flakes
1/2 tsp -vinegar
2 tsp -oil
salt to taste 

Method
Prepare a dough with maida, salt, rawa , oil n water .. keep aside for 15 mts

in a kadai add oil n saute finely chopped onions, garlic,cabbage, carrots, capsicum, peas , corn kernel's , pepper powder ,vinegar and salt .

Make thin chapathis ,fill in d above mixture ..seal the ends of the rolls with water n deep fry !

serve hot with tomato ketchup !

Paneer Frankie roll

Paneer Frankie roll
For the base
1 -glass wheat flour
1/4 th -glass milk
salt to taste

For the sauce
2 -tsp oil
3- garlic flakes
1 -medium sized onion
1- tomato
1- tsp chilly powder
1- tsp kasuri methi
3- tsp tomato ketchup
1/2 tsp sugar

For the filling
Paneer cubes - 50 gms
1-big capcicum
1-onion
1-tomato
1/2- inch ginger
3 -flakes garlic
2 -green chillies
 2tsp -oil 

Method

Make a dough with wheat flour , milk n salt .. keep covered under wet cloth for 30 mts ..

prepare d sauce by adding oil in a kadai, chopped garlic , chopped onions , tomatoes n  fry these till soft , then add chilly powder, kasuri methi, tomato ketchup, sugar .. cool n grind

prepare a filling by grinding onion, tomatoes, ginger ,garlic and green chillies (dont add water )
in a pan add oil n shallow fry paneer cubes .. place it on a tissue paper
n in d same oil add chopped capcicum , ground paste n fry till d raw smell goes add in salt n paneer .. make it a dry gravy !

Roll out chapathis ,N ROAST them .. spread d sauce n add the filling and roll !



Phool Makhana Kheer !

Phool Makhana Kheer !


  • 1 cup phool makhana
  • 1/2 lt milk
  • 1/4 th cup sugar
  • a few strands saffron
  • cashewnuts n raisins a few ..
  • 1 tsp ghee
  • 1/4 tsp cardamom powder

Heat ghee  add cahewnuts n raisins .. take off , then add torn phool makhana n fry till golden brown .. 1/2 of d roasted phool makhana grind to a paste .. boil milk add sugar , d roasted phool makhana n also d ground paste .. add in cardamon powder , fried cashewnuts n raisins along with saffron strands ( previously soaked in little milk )..

Oat vada

 Oat vada

3/4 th cup quaker oats
1/4 th cup bengal gram dhal
1 onion
1/2 tsp salt
1/2 tsp red chilly powder
1 green chilly
lilttle coriander leaves
oil for frying 

Method 
soak bengalgram dhal for 1/2 an hour in hot water .. drain water n grind coarsely .. mix this along with oats, chopped onions, salt, red chilly powder, chopped green chillies, chopped coriander leaves n salt .. heat oil ..form d mixture into round balls ..flatten them n deep fry on medium flame till golden brown ..

TIP - Before making vadas apply little water on your hands to avoid sticking of d mixture ..

  • Baby potatoes -10
  • 2 medium sized tomatoes
  • 2 medium sized onion
  • 2 green chilies
  • 1/2 tsp grated ginger
  • 1/4 tsp turmeric powder
  • 1/4 tsp cumin seeds
  • 1 tsp chilly powder
  • 1/2 tsp garam masalsa
  • 1 tsp crushed kasuri methi
  • 1/2 glass water
  • salt to taste .

deep fry or shallow fry in little oil ..
in a kadai add 2 tsp of oil , cumin seeds, chopped onion ..fry till pink, add in grated ginger , green chillies, chopped tomatoes fry till it becomes mushy n d raw smell goes .. add turmeric powder, chilly powder, garam masala powder n salt .. add water .. prick d fried potatoes n add in d masala ! let till cook till all d masala seep in !..add crushed kasuri methi !

Vaagi baath n baath powder !



vaangi baath rice ..
prepare rice .. 1 glass rice n 2 glass water ..
in a pan add oil, mustard, lil turmeric powder, add cut brinjals n fry till soft add in d above prepared baath powder ..add cooked rice, salt .. can sqeeze in lime 4 tangy flavour !

Moong Dhal n Phova Khichdi .

Moong Dhal n Phova Khichdi .
  • Moong Dhal..1 cup 
  • Thick Phova /Beaten Rice ..1 cup 
  •  Grated coconut..1 cup 
  • Jaggery crushed .11/2 cup's ( adjust for sweetness ) 
  •  Ghee .. 3 tsp 
  • Cardamom powder .. 1/2 tsp
  •  Cashewnuts ...10 
  • Raisins ..10 

Method

In a kadai add  moong dhal n dry fry it, till it changes the color .. cool n soak it in water for 15 mts .. n then cook it in enough water ( dont pressure cook n make it mushy )

Wash n soak thick phova in separate water .. till it dips ..


Dry fry grated coconut till it changes color ... 


In a kadai add jaggery crushed with little water n melt it (single thread) ..then add in cooked moong dhal, grated coconut n add in soaked phova ..stir till it becomes thick . then add ghee , cardamon powder. 


 Spread on a tray n garnish with nuts ..
