Rajasthani Khooba Rotti ,Aaloo Zeera n Rajasthani Dhal !

Rajasthani Khooba Rotti !
  • Wheat flour-2 cups
  • Melted Ghee or oil - 4 tsp
  • water - to make dough
  • salt to taste  
Method
Take wheat flour in a container , add salt, melted ghee/oil n enough water to make a dough ! keep covered under wet cloth for 10 to 15 mts !

Heat a tawa n roll out really thick round rottis .. n place it on heated tawa .. once d colour changes , remove it and place it on a plate n pinch all over , then directly place it again on open flame ! roast on both sides ! serve hot with pouring ghee on top ! 


Aaloo Zeera
  • Potatoes ... 5
  • Oil .. 1 tblsp 
  • Cumin seeds... 2 tsp  
  • Green chilies..3 
  • Turmeric powder..1/4 th tsp 
  • Oil .. 1 tblsp 
  •  Chopped Coriander leaves..1 tblsp 
  • Lemon juice ...1 tsp 
  • salt for taste

Method  
Wash n Pressure cook the potatoes till soft but not mushy , cool, remove the skin n  cut into cubes.
Wash n chop the green chilles . 

In a kadai , add oil n splutter cumin seeds , add chopped green chilly n fry for a while . Add the cubed potatoes, salt n turmeric powder n saute for a while . Switch off n add in chopped coriander leaves n lime juice . Mix well . 

Rajasthani Dhal !
  • Split Green Gram  (Green Moong ) -3/4 cup
  • Moong Dhal -2 tbsp
  • Chana Dhal- 2 tbsp
  • Turmeric-1/2  tsp
Seasoning
  • Oil/Ghee-2tsp
  • Cumin seeds-1/2 tsp
  • Hing/ Asafoetida-1/2 tsp 
  •  Dry Red chilies-2
  • Tomato-2 
  • Ginger-1 inch piece 
  • Green chilly -2
  • Chili powder-1/2 tsp
  • Coriander powder-1 tsp
  • Salt to taste    
 Garnishing  
Lime Juice -1 tbsp 
Fresh coriander leaves chopped 

Method 
soak all the 3 dhals  in water for 20 minutes .

Pressure cook the soaked dhal along with turmeric powder .

In  a kadai add oil /ghee , cumin seeds , hing n red chillies .. then add chopped  green chillies , ginger n fry for a minute , add tomatoes n cook till the raw smell goes n it becomes mushy , add salt n  the powders n fry for a minute . Now add the cooked dhal , water as needed  n boil well . switch off and do the garnishing .
