A Thali of Shevai, Dalithoy, Aaloo Methi, Zeere Meere Khadi, Kothmabari Palle Gojju , Ambuli Chutney , Onion Sanapolo, Ragi Rotti n Roasted Happolu n Papad !

 A  Thali of  Shevai, Dalithoy, Aaloo Methi, Zeere Meere Khadi, Kothmabari Palle Gojju , Ambuli Chutney , Onion Sanapolo, Ragi Rotti n Roasted Happolu n Papad !


 Rice Shevai 
  • Rice-4 cups
  • Grated fresh coconut-2 cups
  • Coconut oil -for greasing
  • Salt to taste .

Method:
Soak the rice in water for around 3-4 hrs.

Grind it to a smooth paste with grated coconut and salt, adding required amount of water. 

In a kadai add the ground batter n heat it ... stirring continuously till all the water evaporates n the dough becomes dry .

Make balls of the dough and steam it for 15 to 20 minutes. 


Grease the shevai mould with coconut oil n place the steamed balls when still warm n press it ,then collect the emerging sevai on a greased plate held underneath. .. repeat for all the remaining steamed balls .  

Spread a clean wet cloth ,n place the shevai's on it ... 


Coconut oil on it adds on more taste .


Dalithoy 
  • Toor dal - 1 cup
  • Green chilly - 4  or according to the taste 

Seasoning 

  • Oil/Ghee -1 tsp
  • Mustard seeds - 1 tsp
  •  Curry leaves - 1 sprig 
  • Dry red chillies -2
  • Hing/Asafoetida water- 1 tsp
  • Salt to taste

Method
Pressure cook toor dal with 1 tsp of oil . It has to be cooked well ,then churn it . Add slit green chillies with salt n boil well .Add water for desired consistency ( medium , neither too thin nor too thick ) 


In a seasoning  pan add oil or ghee , Add mustard seeds , when they splutter add torn red chillies n curry leaves...add this to the cooked dhal n then add hing water . Mix well 

Aaloo Methi 

  • Potato ...3 medium 
  • Onion ..1 
  • Methi leaves ..1 cup heaped 
  • Chilly powder .. 11/2 tsp
  •  Turmeric powder ..1/4 th tsp
  •  Salt to taste 

Seasoning 

  • Oil.. 2 tsp 
  • Mustard seeds ..1 tsp
  •  Cumin seeds ..1 tsp  

Method 

Wash the potato ,peel n chop them into to slightly bigger chunks ( bite able  size ) . Parboil the chopped pieces .. 

Chop onion .

Wash methi leaves n tear them roughly with hands .

In a kadai add oil splutter mustard seeds n then add cumin seeds n stir for a while . Add chopped onion n then fry till reddish brown . Add methi leaves n let it cook till it Wilt's .Add chilly powder, turmeric powder,salt  n stir for a few seconds ,add parboiled potato pieces, little water,mix well n cook it covered in sim flame .


Zeere Meerya Kadi ! Pepper corns n cumin seeds in coconut based gravy ..

  • Grated coconut-1 cup
  • Roasted dry red chillies-3 to 4 
  • Cumin seeds-1/2 tsp
  • Pepper corns-7 to 8 
  • Tamarind-Tamarind seed size 
  • Ghee-1 tsp 
  • salt to taste 
Seasoning 
  • Oil-2 tsp
  • Mustard seeds-1/2 tsp
  • curry leaves -1 sprig 
Method 
Fry cumin seeds n pepper corns in ghee . cool it .

Grind grated coconut, roasted chillies n tamarind to a fine paste n then add roasted cumin seeds n pepper corns n grind again for few mts. remove the ground masala n add water . ( medium consistency )

Boil it well n then give the seasoning .  


Kothmabari Palle Gojju /Coriander Leaves Gojju 

  • Coriander leaves ...one fist 
  • Grated coconut ..1 tblsp
  •  Green chilly ...2 
  • Jaggery ... Goose berry size . 
  • Salt to taste . 

Seasoing

  •  Oil ..1 tsp
  •  Mustard seeds ..1/2 tsp 

Method  
Grind coriander leaves , Grated coconut, green chilly n jaggery to a fine paste , add salt n then season it . 

Ambuli chutney (Raw Mango chutney )..version 1 
  • Raw Mango- 1 medium
  • Grated coconut- 3/4 th  cup 
  • Garlic flakes- 2 
  • Roasted dry red chilly -3 
  • Salt to taste 

Method

Clean n scrap the tough skin of the raw mango, remove the seed n chop it . 

Grind grated coconut, chopped raw mango, roasted dry red  chillies , garlic flakes n salt to a semi coarse paste . 

Note: This chutney shouldnt be too fine nor coarse .



Onion Sannapolo /Spicy Onion Dosa  
  • Onion-2 
  • Raw Rice-1 Cup
  • Thur Dhal-1 fist
  • Grated coconut-1/2 cup
  • Dry red chillies -4 to 5 (dont roast them ) 
  • Tamarind -Tamarind seed size 
  • Salt to taste 

Method
Soak Raw rice n dhal for 2 hours ! 

Grind grated coconut , red chillies n tamarind to a fine paste n then add the soaked rice n dhal n grind to a little coarse paste with very little water . Remove it  ,add salt .. the batter has to be thick .. 


Chop the onion n add it to the ground batter .


Heat a Tawa n smear oil , now take handful of batter n pat it with fingers  , dipping fingers in water .. close the lid n roast ! drizzle little oil on d edges n then toss the dosa on the other side n roast till done ! 

 Ragi Rotti 

  • Ragi flour ..1-1/2 cup's 
  • Rice  flour..1/4 th cup
  •   Onion..1 finely chopped
  • Green chillies finely chopped ..3 or 4 (increase/decrease it per your taste)
  • Cumin seeds ..1/2 tsp 
  • Coriander leaves finely chopped...1 tblsp 
  • Salt to taste
  • Water to mix dough

Method 
 In a bowl  add ragi flour ,rice flour ,chopped  onion, green chilly, coriander leaves, cumin seeds ,salt and mix it nicely by crushing onions with your hands for few minutes for that extra aroma . 

Start adding water little by little and knead it nicely in a dough. The dough should be moist n not hard .

On a plastic sheet or plantain leaf smear oil , take a golf sized ball of the dough n spread it patting with fingers to a round rotti shape . 


 Heat a tava , drizzle little oil and place the rotti on it n roast on both sides .
